Get your fresh gourmet mushrooms right here! These are grown indoors here in Climax, North Carolina on agricultural waste products, including sawdust and soybean hulls. Mushrooms are delicious and nutritious and come in all shapes, sizes, and flavors.


We offer a quarter pound sampler, which includes our choice of mushroom (typically oysters), as well as larger half pound and full pound orders. Mushrooms are freshly harvested and will last 1-2 weeks in the refrigerator inside of a brown paper bag (included). If they start to dry out, you can simply rehydrate them with a little water when cooking them in a pan or use them in dishes with excess water including soups and sauces. You can also fully dehydrate them to save for later, or powder them to make a nice steak rub.


To cook mushrooms, cut or rip them apart and sauté them in a very large pan so that the mushroom pieces sit in one layer. Use medium to high heat, being careful not to burn them. Cook until well done, when they start to get dark and crispy. During the last minute of cooking, add a little butter and stir well. Add cooked mushrooms to any of your favorite dishes, or eat as a side. We love mushrooms on pizza, in pasta, soups, and as a compliment to a wide range of main dishes. Great recipe ideas include pickled mushrooms and lions mane crab cakes (lions mane has a mild lobster flavor, especially when cooked with butter).


Oyster mushrooms come in all colors, and each color prefers different growing conditions. Typically we grow blue or white varieties (blue, pearl, sporeless, white oyster), along with some pink. Pink oysters, although they are beautiful, are very delicate, break easily, and do not store for more than about a week in the refrigerator.


We also grow lion's mane and chestnut mushrooms.
